Air Fryed Apples and Protein Pancakes
I absolutely LOVE Kodiak power cakes pancake and waffle mix. I make a double batch every other day and eat them for breakfast and snacks. I add a scoop of vanilla protein powder and use 2% milk in place of water. I’ve tried it with 2 scoops of protein (which is a full serving) but I find it makes the pancakes dry.

1 cup Kodiak Power Cakes pancake and waffle mix
1 scoop vanilla Premier Protein powder
1 cup 2% milk
Mix well, adding more milk or pancake mix until the consistency is to your preference. Cook on a buttered or lightly oil pan.
Makes 4 large cakes.

I wanted to try the air fryed apple I saw on social media for a while. This morning I found a sorry little apple in the back of my veggie drawer in my fridge and decided today is the day!
Air Fryer Apple:
Ingredients:
1 medium-large apple of your choosing
A little avocado oil.
1 tbsp brown sugar (or to your preferred sweetness)
Ceylon cinnamon
Directions:
Slice apple in half and using a spoon or scoop remove the seeds.
Place apples on an air fryer liner. I LOVE THESE! Big game changer for clean up. Brush or spray a little avocado (or any other neutral oil) on the cut side of the apple.
Place apples cut side down on paper and place in air fryer. 350 for about 7-8 minutes.
Flip using tongs, divide the brown sugar into 2 and place 1/2 a tbsp in each apple. Sprinkle cinnamon on top.
Air fry for another 4 minutes, or until the apple is as soft as you’d like it.
End result of apple.
From here you can eat it as is, top with whipped cream, Greek yogurt, etc. I decided to be extra and cut up my apple and put it on top of my pancake. I added about 1/3 cup vanilla zero fat Greek yogurt and topped that with grain free granola. Absolutely delicious, pretty easy and full of fiber, protein and healthy fats!
