Fermented Dilly Beans Recipe

Fermented veggie ... great for your gut biome!

1 qt spring water*

3 Tbsp salt

2 Tbsp whey**

31⁄2 cups of green beans

Handful of fresh dill or 2 Tbsp dried dill

1 tsp mustard seeds

1 Tbsp grated horseradish

2 cloves garlic

Quart-size mason jar with tight-fitting lid

• In a bowl, mix water and salt. Once salt is dissolved, add whey. Set aside.

• Prepare green beans by snapping off stem ends and keeping the remaining bean whole.

• In quart-size mason jar, add dill, mustard seeds, horseradish and whole garlic. Then stack in

green beans long-wise (the neater the stack, the more that will fit).

• Pour water mixture over green beans until jar is full.

• Screw on top tightly and set on counter for a week or up to two weeks for stronger flavor,

“burping” the jar daily to release built-up gases.

• Once done, store in refrigerator and enjoy. Great healthy snack, addition to charcuterie board or

garnish for Bloody Marys.

* Avoid tap water due to municipal additives (eg cholorine) that can impact fermentation. If you must

use tap water, filtered water is best.

** Whey can be obtained by straining yogurt or kefir through cheesecloth or a paper coffee filter; it

is the water liquid that drips through. Or, you can use a culture starter, following instructions on its

packaging.
