Menu week of 3.17

The chaos kitchen is heavy on the chaos this week. We’re headed to the beach next weekend for a quick pause before our busy season really kicks up. Spring has SPRUNG around here! I’ll be bringing fruits and veggies with me but definitely enjoying eating out as well.

Speaking of chaos, I whiffed HARD and didn’t put cabbage in the baskets for St. Patrick’s Day. In my defense, y’all have strong opinions about cabbage. Some of you love it, some of you absolutely hate it. My apologies to all of our cabbage lovers!

This is an example of what I’ll be (hopefully) feeding my family starting next week. I use what’s in the baskets from the delivery on 3/12 and 3/19. My household is a mix of vegetarians (I eat fish) and meat eaters (one who’s diet is 75% chicken tenders), hence the “chaos kitchen” moniker. Sometimes I feel like I’m a short order cook!

Sunday: Sheet pan veggies using zucchini, potatoes, cauliflower, broccoli, carrots and onions. I’ll add vegetarian sausage (Beyond sausage is very good!) and the meat eaters will have ham. I’m making sourdough discard rolls for the first time using this recipe: https://www.twelveonmain.com/easy-sourdough-discard-dinner-rolls/ I’m also making peanut butter cookies.

Monday: Broccoli cheddar soup, salads baked salmon/chicken with garbanzo beans, carrots, onions, avocado, strawberries, etc. Leftover rolls

Tuesday: Eggs with sautéed spinach, onions, mushrooms and topped with avocado and tomatoes. Roasted red peppers on the side

Wednesday: Black bean burritos, Spanish rice. I’m also making a small baked ziti for my oldest who’ll be home holding down the fort.

Thursday: We’ll be at the beach, but here’s what I’ll be taking: String cheese, greek yogurt, hummus (I’m making that Monday and I’ll post recipe on social media) cucumbers, broccoli, carrots, hard boiled eggs, strawberries, apples, bananas, pears, protein shakes and raw nuts for snacks. I’m absolutely going to enjoy some ice cream, iced coffee, a cinnamon roll or three! I’ll be turning 50 in June and I’ve found my body and brain have a hard time recovering from lots of processed foods. It’s all about balance! If I have time I’ll make a separate blog post.

Saturday: If I were home I’d most likely make butternut squash soup.
