Potato, Kale and Sausage soup

Everyone has their comfort food, and for me it’s homemade soup. One of our favorites is this hearty kale, potato and sausage soup. I make it vegetarian but you can easily substitute with 1 pound of Italian sausage. If you are using regular sausage sautee first, then add onions.

Ingredients:

1 package Tofurkey Italian style sausage, sliced into 1-1.5 inch chunks

2-3 carrots, sliced

3 cups of potatoes. I like to cut them into large chunks so they don’t get soggy.

1 yellow onion, diced

1/2-1 whole bunch kale. Washed, stems removed and torn into pieces.

6 cups vegetable broth. I love making it using better than bouillon

2 cups 1/2 and 1/2.

*If you like more 1/2 and 1/2 you can swap out with veggie broth. As long as you have about 6 cups of liquid.

1-2 tsp olive oil

Dried Italian seasoning to taste

Salt and pepper to taste

Pinch of chili pepper salt.

Directions:

1.Sautee onion in 1-2 tsp olive oil in soup pot until softened. Add Italian seasoning.

2. Stir in broth, 1/2 and 1/2, potatoes, carrots, sausage over medium heat. Bring to a boil and reduce low until potatoes are tender, stirring occasionally. About 30 minutes.

3. Season with salt, pepper and chili salt. Add torn kale and stir. Cook another 10-15 minutes or until kale is tender.
