Recipe round up week of 8/20

Hello! Welcome to my first installment of “recipe roundup”. These recipes feature the produce found in your weekly baskets.

This week our vegetable basket was full of seasonal goodness. Osage Farms cabbage, tomatoes, zucchini and green beans grown right up the road in Rabun Gap, Georgia. We also had red potatoes, sweet potatoes, onions, poblano peppers, cilantro, romaine lettuce, corn, cucumbers and carrots. There were also a dozen organic, cage free eggs from Lathem Farms based in Pendergrass, GA.

You found cantaloupe, South Carolina peaches (last of the season) honeycrisp apples, plums, bananas, grapes and blueberries.

There’s nothing better than Pico de Gallo. It’s easy to make and tastes so much better than premade salsa. You can add it to eggs and add 1/2 an avocado, top your fish or chicken, use as a salad dressing for a taco salad, and you can’t go wrong with chips! This recipe uses roasted poblano peppers for an interesting twist on the classic.

Comfort meals are my favorite, but the calories, sodium and saturated fats aren’t. Cabbage rolls are a comfort meal to me, but the prep keeps me from making them. Unrolled or “lazy” cabbage rolls are a great alternative.

A great meatless meal, eggs and vegetable ratatouille is easy and delicious. Sub the green peppers for poblano.

Cantaloupe is a summer staple. Thankfully the cantaloupe was excellent this year! Cantaloupe can be more than the “big chunk” in the fruit salad! Embrace your adventurous side and try one of these unique recipes.
