Spinach salad with strawberries and lemon poppy seed dressing

Easy, delicious and full of nutrition, spinach salad is a classic especially when it’s strawberry season!

In a mason jar add 1/2 cup lemon juice, 1/4 cup honey or to taste, 1 tbsp dijon mustard, 1 tbsp light mayo and 1 tbsp poppy seeds. Shake until mixed. This is good for 2-3 servings.

You’ll need: spinach (the bag that came in this week’s basket is perfect) 4-6 sliced strawberries, a few thin slices of red or yellow onion, 2-3 tbsp herbed goat cheese diced, 4-6 oz chicken, 1/4 cup almonds, slivered and toasted. *

In a large bowl add 10 ounces of spinach. Add enough of the dressing until well coated.

Top with remaining ingredients and enjoy!

*Toasting your own almonds is very easy! I put raw, whole almonds in a silicone bag and smashed a few times until they’re broken but not crushed. Heat up a small amount of oil in a pan and add the almonds once the oil is very hot. Stir constantly, for about 4-5 minutes and enjoy!
