What do I do with…..Green Cabbage?

I’m fortunate enough that many of our customers have become friends and frequently reach out to me with questions. “What do I do with….(insert vegetable/fruit here)?” Welcome to the first What do I do with this Wednesday.

Here’s some interesting facts about cabbage:

  • Cabbage is from the family Cruciferae. The family name comes from the Latin word meaning cross, because the flowers are cross-shaped.

  • Evidence shows cabbages have been cultivated for over 4,000 years. Brussels sprouts, which are in the cabbage family, are the youngest with records dating back only 500 years.

  • Scrolls from 1000 BC found in China stated cabbage could be used to cure baldness in men.

  • Jacques Cartier introduced cabbage to North America on his third voyage in 1541.

  • Babe Ruth used to wear a cabbage leaf under his baseball cap during games and it is reported he switched it out for a new leaf halfway through the game.

  • At the turn of the century, cabbage was thought to be food for poor people. Now it is regarded as one of the most nutritional vegetables and is thought to have strong anti-aging and anti-cancer properties.

Scott Robb holds the record for largest cabbage ever grown in the USA. 138.25 pounds!

At 22 calories per cup cabbage is not only low in calories but good source of potassium, folate, and vitamin K.

Here’s a round up of some great recipes I’ve found on Allrecipes.com. No blogger chatter!

How do you like cabbage? I like to sautee it a little olive oil, add fresh shelled lady peas and mix in hot chow chow.
