Guest Blog and Sourdough Pizza Recipe

Losing weight is about more than diet and exercise, it’s a full body, mind and lifestyle transformation. Today I’m so proud to share an inspiring story from one of my favorite people on earth, my best friend Myra. She’s achieved a remarkable 100 pound weight loss. She’s doing it the right way: eating real, wholesome food, staying active and maintaining a positive attitude. Along with her story she’s sharing a delicious recipe that’s been a favorite on her journey. Whether you’re on your own health journey or just looking for a great recipe, you’ll love her approach to a healthier, happier life!

On my journey to losing over a hundred pounds I made several lifestyle changes. Along with moving my body more, one of the most impactful things I’ve done is eat more real foods. I make dishes I enjoy with whole food ingredients and the least amount of processed foods I can. Being a sourdough baker, I have plenty of sourdough discard to experiment with. One of my favorite finds is this delicious pizza. Sometimes I load it up with fresh veggies, sometimes I just add cheese. Here is my recipe!

Sourdough Discard Pizza

Sourdough Discard Pizza

INGREDIENTS:

1 1/2 c flour (187g)
1/4 teaspoon baking soda (1.25g)
2 teaspoons baking powder (10g)
pinch salt (5g)
1 c Greek yogurt (225g)
1/2 c sourdough discard (130g)

DIRECTIONS

Preheat oven to 500F.

Brush a large cast iron skillet with olive oil, set aside.
Mix together all of the ingredients for the dough in a large bowl until a dough forms. If the dough seems a little dry, add 1 tbsp more greek yogurt at a time, until the dough starts to come together and soften up, it should be moldable!
Lay the dough on a floured surface and knead with your hands a couple of times. Once smooth, roll the dough out into a large circle on a piece of parchment paper lightly dusted with flour.
Placed the rolled out dough into the prepared cast iron skillet. Fold the edges over to create a crust.
Top the dough with pizza sauce, shredded mozzarella, and as many toppings your heart desires.
Lightly brush the crust with olive oil.

Place cast iron skillet in the oven and bake at 500F for 15-18 minutes or until the cheese has melted, and the crust is golden brown.
Remove and allow to cool for at least 1-2 minutes before transferring to a cutting board. Slice and enjoy!
