Sandwich Bread
With the ice/snow storm threatening Metro Atlanta Friday you don’t have to run to the store for bread. You can make your own! Bread can be intimidating, but this recipe is definitely beginner friendly.
Materials:
If you have a stand mixer with a dough hook attachment that’s the easiest option, if not grab a large bowl, roll up your sleeves and knead it out my hand.
Rubber Spatula/wooden spoon
Measuring cups
2 loaf pans
Parchment paper (not necessary but helpful)
Plastic bread bags
Pastry brush
Ingredients:
2 cups warm water
1 tablespoon active dry yeast
1/4 cup honey
2 tablespoons avocado or olive oil.
2 teaspoons of salt
4.5 cups of bread flour
Melted butter for brushing on top of bread
Directions:
Combine water, honey and yeast in a bowl Whisk it together, cover with a tea towel and let it activate for 10-15. It will be bubbly.
Add remaining ingredients.
Turn on your mixer with dough hook. Mix until it forms a dough ball and pulls away from the bowl.
If you don’t have a mixer stir until combined and on a lightly floured surface knead for about 8-10 minutes or until the dough becomes smooth and elastic. It shouldn’t feel sticky but should feel tacky to the touch.
Cover and place in a warm place for 60-75 or until it’s doubled in size. I put mine in the microwave and leave the light on.
After it’s doubled punch the dough down in the middle, place on a floured countertop and divide into two equal parts.
Pull each half into a rectangular shape (you can also use a rolling pin if the dough is tearing) roll it up and place in a loaf pan lined with parchment or just an ungreased loaf pan.
I put my loaves in plastic bread bags and then cover with a tea towel, but a tea towel is just fine. Back into the microwave 60-120 minutes. You want your bread to be about an inch over the top of the pan.
Bake at 375 for about 25-30 minutes or until they are gold brown.
Brush the top of each loaf with melted butter.
This bread freezes very well, so if you don’t think you’ll finish both loaves before they go bad wrap it in foil and pop in the freezer.
