Recipe Round up 10/8

Everyone loves the Fall and for a different reason. Football, playoff baseball, cooler mornings, changing leaves, Halloween, apples, hard squashes, warm bread, roasted vegetables and SOUP are some of my favorites!

In this week’s basket you’ll find Spaghetti squash, broccoli crowns, grape tomatoes, Florida tangerines, pears, sweet potatoes, kale, green leaf lettuce, onions, celery carrots and avocado.

My mantra for healthy eating is “Fail to plan, plan to fail”. Spending an hour on delivery day doing some meal preparation will save you significant time, calories and money. ALWAYS wash your produce first and store in glass containers. It will last so much longer.

  • Use your green leaf lettuce, grape tomatoes, thinly sliced onion, celery, carrots, broccoli, finely chopped kale and store in the fridge for a nutrient dense salad. Top with avocado, lean protein and a simple dressing and you’re good to go!

  • Cut and wash celery, broccoli and carrots for a quick snack. Add string cheese, raw nuts or a make a dip using plain, non-fat Greek yogurt.

  • Bake sweet potatoes and keep in the fridge for a snack to fight your sweet tooth. I add a little peanut butter to mine (don’t knock it till you try it)

  • Keep your fruit at eye level in your refrigerator.

  • Keep mirepoix (carrots, onions, celery) diced up and ready to go. Add flavor to your dishes and not too much salt.

  • Bake your spaghetti squash, scoop and shred the insides. Take it out of the fridge and reheat in a pan with a touch of olive oil.
