Recipe round up 9/17

The signs of Fall are everywhere- the changing temperatures, the trees starting to change and the Fall/Winter produce is starting to show up!

This week’s baskets contained: Delicata squash, bell peppers, broccoli, cucumbers, red potatoes, onions, sweet potatoes, zucchini, romaine, tomatoes and avocados. Our add-ons were mushrooms, tomatoes, spring mix, plums, apples, pears. Endless possibilities!

Delicata squash is a vegetable that’s having it’s moment. There’s no need to peel the rind, Delicata squash is named for it’s delicate, edible skin. I love it roasted, sautéed in brown butter and topped with Botanical blend salt, stuffed with wild rice and vegan sausage or simply roasted and served on a bed of mixed greens.

Most people don’t need much inspiration when it comes to broccoli. I like to keep some chopped in the refrigerator for snacking raw, but my favorite way to eat it is broccoli cheddar soup. I love this copycat Panera recipe from Allrecipes.com Copycat Panera broccoli cheddar soup

Some people see bell peppers and think to have stuffed peppers, I think raw veggies and fajitas! I often make “clean the fridge” fajitas and add whatever vegetables I have that need to be used in the skillet. I add protein (we’re vegetarian so it’s veggie chicken or sausage) taco seasoning, Tajin, cumin and if I’m feeling spicy I’ll add chili pepper salt. We like low carb wraps, but it’s also great on a plate! Top with lettuce and other fresh vegetable and a dollop of zero fat plain Greek yogurt.

This time of year the zucchini plants are still cranking but YOU may be burning out. Zucchini muffins are a favorite here. I like this recipe from Sally’s baking addiction. I suggest squeezing the water out of your zucchini first. You can use a tea towel, a nut milk bag if you have one or cheesecloth. I add 1 tsp of apple pie spice and omit the nutmeg and always add the chocolate chips. Life’s too short to skip chocolate! Zucchini muffins
