Roasted potatoes with basil salt and oregano

I love receiving the fresh produce from Holland Botanical.  Here is a picture of this week’s delivery.  There is a rainbow of colors! 

This week the potatoes are absolutely beautiful!  I love admiring their vibrant colors and unique shapes. I was curious to learn more about their color and discovered it is because they are rich in anthocyanins.   Anthocyanins are water-soluble pigments with blue, red, or purple shades.  They are found in tubers, flowers, and fruits like berries, currants, and grapes.  Anthocyanins are also strong in antioxidants which help promote good health. 

My family absolutely loves eating all different types of roasted potatoes.  I keep it simple and wash and cut them, then toss them in a bowl or ziploc bag with avocado oil, fresh herbs, and seasonings.  I used the fresh oregano that came from this week’s delivery along with Holland Botanical basil salt.  Then I baked them in the oven at 400, turning them every 10 minutes.  They turned out so delicious and flavorful!  They’re crispy on the outside and fluffy on the inside!
