Menu planning week of 2/4/24

Welcome back to the newest edition of the chaos kitchen!

This week I’m starting on Sunday vs Monday. I’ll be using a combination of contents from last week’s basket the basket that I’ll deliver on Tue/Wed. I have HIGH HOPES every week that I’ll be able to make everything I plan out. Some days I’m dragging in after a long delivery day and it’s frozen pizza to the rescue!

Last week there was an ABUNDANCE of broccoli in the basket! One cup of broccoli is only 35 calories, loaded with fiber, protein, vitamins and minerals. Some studies suggest that eating higher amounts of cruciferous vegetables like broccoli can reduce the risk of certain types of cancer. Whether you eat it raw, steamed baked you can’t go wrong choosing to put broccoli on your plate!

Sunday: Broccoli cheddar soup, chicken wraps with fresh vegetables, hummus. Vanilla cake
I’ve used this recipe for years. Follow it exactly as it’s written (I found out the hard way) and it will come out perfect!

Monday: Vegan sausage and peppers with potatoes, onions and mushrooms. Serve over rice, in tortillas, on sub rolls, etc.

Tuesday: Frittata with spinach, onions, peppers, tomatoes, fresh herbs. Roasted/air fried potatoes on the side. https://sallysbakingaddiction.com/frittata-recipe/

Wednesday: Baked spaghetti squash with spinach. I’ll most likely add some vegetarian chicken. Salad and garlic bread on the side, brownies for dessert.

Thursday: I’m torn between Cabbage rolls and salmon foil packs over lemon slices. Half the family doesn’t eat fish (I do) and the other half won’t touch cabbage with a ten foot pole.

Friday: FREE FOR ALL! Leftovers, pizza, etc. The kitchen is CLOSED.

Saturday: Beef stew (I use Gardein beef tips) with potatoes, carrots, onions. Roasted beet salad with vinaigrette. Fresh sourdough bread.
