Welcome back to the chaos kitchen! This week was packed with fresh and healthy choices. I was so glad to have Roma tomatoes in the basket! I hope you’re enjoying your salt samplers as well. Add it to your dishes, make your own salad dressing, sprinkle over roast vegetables or enjoy it on raw vegetables.

I have rosemary and basil salt available year round, the other varieties are just a few times a year. They make great hostess gifts, party favors or a special treat for yourself. When ordering produce, simply add to your order. I do offer bulk discounts and wholesale prices for over 24 units. Please message me for more information!

This week’s menu will contain produce found in this week’s basket as well as the basket delivered February 13 and 14. My husband and I are vegetarian and our kids are most definitely NOT. Do what works for you!
I have dessert every single day. It’s for everyone, every day! You don’t have to earn it and you shouldn’t feel guilty eating it. Having a serving of something you enjoy isn’t bad! Life is short and cake is delicious.

Super Bowl Sunday: Baked potato bar: vegan chili, cheese, steamed broccoli, non-fat plain Greek yogurt instead of sour cream (trust me, it’s awesome) bacon, onions. Chicken wings, vegetarian Buffalo chicken bites, raw vegetable tray with ranch dip. (Healthier way- add a packet of ranch seasoning to 1 cup zero fat Greek yogurt. Top with fresh dill if you have). Chocolate chip cookies.

Monday: BBQ chicken, baked mac and cheese, coleslaw/broccoli slaw, sliced apples and strawberries.

Tuesday: Crockpot vegan cauliflower curry. My kids wouldn’t touch this if they were paid to. Not because it’s bad (it’s delicious) but because it “smells too much like spicy farts”. Yes, my kids are 19 and 23. Ha! Wednesday: Sheet pan roasted vegetables and a vegetarian roast. I’ve been on the fence with trying this recipe out as week: https://www.agirlcalledadri.com/loaded-hasselback-butternut-squash/ I like to snack on raw fruits and vegetables when I’m cooking.

Thursday: Chicken, broccoli and rice bake. Chopped salad with carrots, cabbage, onions, peppers, etc. Brownies.

Friday: Fend for yourself! Leftovers!

Saturday: Chicken and dumplings.

I like to eat leftovers for lunch, lots of raw fruits and vegetables for snacks, greens in my smoothies or breakfast scramble.
